Pistachio Semifreddo

This pistachio semifreddo is a creamy, airy, frozen Italian dessert that's surprisingly easy to make at home, no ice cream maker required! It has a melt-in-your-mouth texture that's lighter than ice cream, yet still incredibly luscious, with buttery roasted pistachios in every bite for rich flavor and satisfying crunch. It's an impressive make-ahead dessert that's perfect for summer entertaining!

The Best Pistachio Semifreddo

Pistachio is my all-time favorite gelato flavor, so when I set out to make a semifreddo recipe, pistachio was the flavor I tried first. And I'm so happy with how it turned out!

This was a really fun recipe to make. I tried a few different versions, but this is the one I ultimately liked best. It has the smoothest, creamiest texture and the most pronounced pistachio flavor. It's also pretty close to the traditional way of making it.

What Is Semifreddo?

Semifreddo is a frozen Italian dessert made of whipped eggs, heavy cream and different flavors such as fruits, nuts, chocolate, vanilla, and more. The mixture is chilled until set and then sliced for serving. 

Semifreddo literally means "half cold" or "half frozen" because it has a creamy, soft and light texture that melts in the mouth, rather than being hard or icy.

Semifreddo vs Ice Cream

These two desserts share a lot of the same ingredients, but semifreddo's texture sits somewhere in between mousse and ice cream. This is because semifreddo relies on aeration coming from whipping egg whites, egg yolks, and heavy cream, then gently folding them and freezing in a mold. 

Ice cream, on the other hand, has a base that can also be made out of cream and eggs, but is liquid at first and becomes aerated and chilled through the process of churning.

There are a few different techniques for making semifreddo and simpler ways of making similar frozen desserts like no-churn ice creams. 

What I love most about semifreddo is that it doesn't require special equipment, like an ice cream maker. It does require some time and effort, but I'm here to tell you that it's absolutely worth every single bit!

A Few Key Steps For Making Pistachio Semifreddo

Separating the eggs and then whisking them over a double boiler is an important step for several reasons. For one, it safely pasteurizes the eggs. Some semifreddo recipes skip this, but precooking ensures that it's safe to eat. 

It's also what gives this dessert its signature creamy, mousse-like consistency. Gently cooking the eggs creates a lighter, more stable foam, which gives the semifreddo its signature airy texture and creamy consistency. 

This is what prevents it from turning into a solid, hard, icy block. Instead it results in a luscious, smooth, frozen dessert with the texture of ice cream. 

I use store-bought pistachio butter rather than grinding up my own pistachios from scratch because I think it has a better, smoother texture. You can pulverize shelled, unsalted pistachios in a high-powered food processor instead, but I find it to be a little bit grainier even after blending for a long time.

Once the beaten egg yolks, egg whites, pistachio butter, whipped cream, and pistachios are all carefully mixed together, it gets frozen in a loaf pan for at least 8 hours. 

Overnight is best to make sure it's had enough time to freeze solid all the way through. If you have less time, use a larger, more shallow dish instead so it freezes faster. 

Take your semifreddo out of the freezer 5-10 minutes before you're ready to serve so it can thaw out a bit and soften. Remove the pan, then peel off the plastic, and place it on a serving platter. 

I like to smooth it out with an offset spatula to get rid of any imperfections, but you can also just cover them with more crushed pistachios. 

Then, just slice and serve! You can top with some extra whipped cream, add some fruit (cherries and peaches are great!) or cookies, or just serve it as-is. 

Alternatively, you can let it soften a bit more and scoop it out like ice cream, but I think slicing it is more unique and fun.

Pistachio Semifreddo Ingredients

Cream - Use heavy cream that's been previously chilled so it's easier to whip.

Eggs - Eggs build a large portion of this dessert so make sure to use fresh, high-quality, pasture-raised eggs for the best texture and flavor. 

Pistachio butter - Use high-quality pistachio butter made from 100% pistachios. It should be unsweetened and unsalted. 

Pistachios - Use fresh, shelled, high-quality pistachios to fold in the batter and add some crunch. Look for Sicilian Bronte pistachios for the best flavor and color. Toasting them in the oven or in a pan will make them more fragrant and have a better texture.

How to Make Pistachio Semifreddo

  1. Line a 9x5-inch loaf pan with plastic wrap, leaving several inches of overhang on all sides. Set aside.
  2. Place the egg yolks and ¼ cup of the sugar in a double boiler or a heatproof bowl set over a saucepan of barely simmering water. Whisk constantly until the mixture is pale, thick and reaches 160°F on an instant-read thermometer, about 5 minutes.
  3. Remove the bowl from the heat and continue whisking, or beat with a hand mixer, until the mixture has cooled slightly and increases in volume. Beat in the pistachio butter and salt until smooth. Set aside.
  4. In a second heatproof bowl, combine the egg whites and remaining ¼ cup sugar. Set over the same double boiler and whisk constantly until the sugar has dissolved and the mixture reaches 160°F, about 3 minutes.
  5. Remove from the heat and beat with a hand mixer or stand mixer until glossy medium-stiff peaks form. Set aside.

  1. In a separate bowl, whip the cold heavy cream to medium peaks.

Pro Tip: Be careful to not overwhip the cream. You are aiming for medium, not stiff peaks, otherwise the cream can break and create a grainy or buttery texture once folded in.

  1. Fold about one-third of the whipped cream into the pistachio mixture to lighten it. Gently fold in the remaining whipped cream until mostly combined.

Pro Tip: To correctly fold and preserve the airiness of the cream and eggs, use a rubber spatula to gently lift and turn the ingredients repeatedly. Slide the spatula along the bowl's bottom edge, and rotate your wrist as you bring the spatula back upward, moving the ingredients from the bottom of the bowl up to the top over and over.

  1. Add the whipped egg whites and fold gently until no streaks remain. Fold in the chopped pistachios.

  1. Transfer the mixture to the prepared loaf pan and smooth the top. Cover with the overhanging plastic wrap and freeze until firm, at least 8 hours or overnight.
  2. To serve, unwrap the semifreddo and invert onto a serving platter. Remove the plastic wrap and let sit at room temperature for 5 minutes to soften slightly. Use an offset spatula to smooth out any lines or imperfections. 
  3. Sprinkle with chopped pistachios to garnish, then slice into thick pieces and serve.

Recipe Tips for Perfect Semifreddo

  • Toast the pistachios in a 350°F oven for 5-8 minutes, or just until fragrant, then rub them between a clean kitchen towel to remove some of the skins. Let cool completely before chopping, or grind your pistachios in a mortar and pestle for a slightly different texture. 
  • Cook the eggs gently over low heat while whisking constantly so they thicken rather than harden. 
  • Fold the mixture carefully, so it doesn't deflate. Don't whisk when combining the mixtures. 
  • Give this at least 8 full hours to freeze. Overnight is best to ensure it's frozen solid for the optimal texture. 
  • Dip your knife into hot water and wipe it clean between slices so it cuts easier and cleaner.

Pistachio Semifreddo Variations

  • Use hazelnut, peanut, or almond butter, along with their respective chopped nuts, instead of pistachio for a flavor variation.
  • Swirl in a little salted caramel, chocolate sauce, or extra nut butter while adding the semifreddo mixture to the loaf pan for extra flavor and a nice visual effect. 
  • Top your semifreddo slices with fresh cherries, blueberries, raspberries, or peaches. Or turn them into a compote and spoon it over the top.
  • Increase the salt level to get a nice sweet-salty contrast.
  • Add a streusel crumble, crushed graham crackers, or granola as a base to make a crust for your semifreddo.

Pistachio Semifreddo Serving Suggestions

This silky smooth semifreddo is best served with a cappuccino or an iced cold brew coffee. Or, for an even more decadent dessert, serve it like an affogato with a shot of hot espresso poured right over the top.

To take it to the next level, you can add a dollop of this unctuous mascarpone whipped cream and some crisp savoiardi cookies. But honestly, it's good enough to have it on its own!

How to Store Semifreddo

Semifreddo will keep in the freezer for up to 1 month if wrapped tightly in plastic wrap and stored in its loaf pan or another airtight container. Allow it to soften slightly at room temperature to make it easier to slice and serve.

FAQs

How long should I freeze semifreddo for?

You need at least 8 full hours in the freezer for it to set properly, otherwise it could collapse or break when unmolding or slicing. For best results, allow it to freeze overnight. If you have less time, use a shallow pan instead.

Can I make this with other nut butters?

Yes, the pistachio butter can be easily replaced with hazelnut, peanut, or almond butter.

Is it necessary to precook the eggs?

Traditionally, eggs are whipped raw and incorporated directly into the mixture. However, I recommend precooking over a double boiler because this guarantees they will be safe to eat and helps to create a lighter, more stable foam in the semifreddo, reinforcing its signature airy texture.

Why is my semifreddo icy or hard instead of creamy?

Most likely because the eggs weren't properly whipped or aeration in the mixture was lost due to excessive folding.

  • 3 egg yolks large, room temperature
  • 2 egg whites large, room temperature
