- 1 block of cream cheese softened
- ½ cup mayonnaise
- 8 oz. Swiss cheese grated
- 4 green onions thinly sliced
- 1 pound bacon cooked and crumbled
- Ritz crackers Crumbled (just shy of 1 sleeve), plus more for serving
Preheat the oven to 325 degrees.
Combine the cream cheese, mayonnaise and Swiss cheese until well distributed. You can use an electric mixer, but a rubber spatula and a little elbow grease will get the job done just fine.
Mix in the green onion and bacon and place in baking dish. Top with the crumbled Ritz crackers.
Bake for about 25 minutes until the center is hot and bubbly. Serve immediately with crackers on the side for dipping.
- Take the cream cheese out of the fridge at least 30 minutes before starting. It has to be softened so you can easily combine the ingredients later on.
- Allow the bacon dip to rest and cool a little before serving. It will have a better texture, still gooey but easier to scoop. It will also be safer for everyone as it will be scalding hot fresh off the oven.
- Do not throw away leftover bacon fat. Pour it into a jar and keep it in the fridge to use in vinaigrettes, for roasted potatoes and onions, or adding flavor to all kinds of different dishes.
