Apple Butter Quesadillas

This quick and easy recipe for Apple Butter Quesadillas is a sweet, salty and completely addictive snack. It uses just a few ingredients and is perfect for adults and kids alike.

Ingredients

  • 1 8-inch flour tortilla
  • 1 tablespoon apple butter homemade or store bought
  • 3 slices pepper jack cheese
  • 1 teaspoon fresh cilantro chopped
  • 1 tablespoon salted butter

Instructions

  1. Spread the apple butter around the tortilla, then top with slices of pepper jack cheese, then a sprinkle of fresh cilantro. Fold in half to enclose the filling.
  2. Melt butter in a medium sauté pan over medium heat. Place the tortilla in the pan and let cook until golden brown and crisp, about 2-3 minutes. Use a spatula to flip over on to the other side and cook for an additional 2-3 minutes.
  3. Remove the quesadilla from the pan and place on a cutting board. Slice into wedges and serve immediately.

Notes

  • Slice the cheese thin so it melts before the tortilla over-browns.
  • Don’t overfill the quesadilla or it will be harder to flip cleanly.
  • Adjust the amount of apple butter depending on how sweet you like it.
  • Serve right away for the best texture.
